Crooked Stave Surette

Surette The farmhouse provisions beer of Wallonia were brewed by farmers during the winter months using recently harvested grains and fermented oak casks before maturing for several years. In various regions these farmhouse ales were called “Surette” meaning tart, due to the vinous character that developed from wild yeast and bacteria. Our rendition of a rustic farmhouse ale was brewed with malted barley, raw wheat, rye, oats, and spelt, then fermented with a blend of yeasts before aging in our large oak foeder previously inoculated with wild yeast and bacteria. Surette pours a golden-orange hue with a rocky white head, taking on an aged vinous character dominated by ripe fruits, a mild spice, and earthy undertones. The flavor is a balance of malt and grains with a light hop presence, and wild yeast characteristics dominating through the dry, effervescent finish. This beer is bottled with the natural yeast, if cellared in a cool dark place this beer will develop more complex characteristics and evolve for years to come.
