Rustic Brie Torta Recipes

Small 8 oz Brie rounds split and filled with delightful spreads. Make this today.

All ingredients can be adjusted for taste preference. Serve any or all Tortas with your favorite cracker, crostini or baguette slice.

pssst… An open-bladed cheese knife or a long piece of dental floss wrapped around the middle of the Brie and pulled make for easy Brie cutting.

Cranberry Pear Pistachio Torta

Ingredients:
8 oz cream cheese (we love Gina Marie)
2 tbsp Oregon Growers Cranberry Pear Spread
2 tbsp pistachios, chopped
2 tbsp dried cranberries, chopped
8 oz Brie round, sliced in half horizontally

Directions:
Whip cream cheese. Combine cranberry pear spread, pistachios and cranberries, and mix into cream cheese. Layer mixture evenly over bottom half of Brie round. Top with remaining Brie half. Wrap securely in plastic and chill 2 hours before serving.

Allow at least 30 minutes to bring Brie to room temperature before serving. Garnish with cranberries and pistachios.

Ginger Pecan Torta

Ingredients:
8 oz cream cheese (we love Gina Marie)
2 tbsp Ginger People Ginger Spread
2 tbsp pecans, chopped
1 tbsp fresh rosemary, finely chopped
2-4 dried apple slices, finely chopped
8 oz Brie round, sliced in half horizontally

Directions:
Whip cream cheese. Combine ginger spread, pecans, rosemary, and apple, and mix into cream cheese. Layer mixture evenly over bottom half of Brie round. Top with remaining Brie half. Wrap securely in plastic and chill 2 hours before serving.

Allow at least 30 minutes to bring Brie to room temperature before serving. Garnish with sprig of rosemary.

Sundried Tomato Pesto Torta

Ingredients:
8 oz cream cheese (we love Gina Marie)
1 tbsp pesto
2 tbsp sundried tomatoes, chopped
2 tbsp roasted pine nuts, chopped
8 oz Brie round, sliced in half horizontally

Directions:
Whip cream cheese. Combine pesto, sundried tomatoes and pine nuts, and mix into cream cheese. Layer mixture evenly over bottom half of Brie round. Top with remaining Brie half. Wrap securely in plastic and chill 2 hours before serving.

Allow at least 30 minutes to bring Brie to room temperature before serving. Garnish with sundried tomatoes and pine nuts.
