A Local’s Guide to Easy + Fabulous Dinners: Tuesday … or Any Day!

Sure, summer’s wound down, but in this town, we’re always eager to play and satisfy our appetite for great food. Well, we’ve made that sooo much easier for lots of people this year with our “What’s for Dinner Tuesday” in-store meal plan and prep program.

We started What’s for Dinner Tuesday in May, and customers are loving it! Every week, we think up a delicious dinner, gather all the ingredients, prep them and let you serve a fantastic meal in mere minutes.

We’ve transformed Tuesday nights for hundreds of customers, with almost a thousand orders to date — from Prima Salsa Snapper and Chimichurri Steak to Lemon Caper Chicken and Teriyaki Shrimp. All the recipes, shopping lists, and cooking instructions are posted to our blog, and you can easily grab our ingredients and create these fabulous meals any night. (Of course, you can always amp up your time to play even more on Tuesdays — just order our dinner du jour and let us do all the shopping and prepping for you, too!)

Ok, ready for some weeknight wonder? We’ve rounded up three super popular Tuesday night menus so that you can have the ultimate local’s guide to easy and delicious dinners. Just think about it — you don’t have to think! Just choose one of our menus, stop by the store, and you’re good to go.

Ingredients (to have on hand)

Salt, Pepper, and Olive Oil
Note: You’ll need 2 tbsp. of white wine for this recipe.

Here’s your shopping list:

2 Pacific Snapper Fillets (Or any other type of buttery, mild, white fish available—our seafood experts will hook you up!)
1 Container of Prima Salsa—it’s packed with bright flavors of top-notch ingredients, and it’s a family recipe of Newport’s own Wesley Jordan.
1 Lime
1 Bunch of Asparagus
1 Package of Cornbread Rounds
1 Ripe Avocado (optional)
Fruit—ask our produce experts which fruit is in season to serve on the side.

Here’s what to do:

• Preheat oven to 425°F.
• Wash, trim and pat the asparagus dry.
• Cut lime into four wedges.
Note: Snapper and asparagus may be cooked in the oven simultaneously.

Snapper

• Place 2 tbsp. of white wine into a baking dish.

• Lay snapper fillets on top of the wine.

• Spoon salsa over the snapper, enough to cover it evenly.

• Bake in preheated 425°F oven for 10 minutes or so.

• Remove from the oven and squeeze juice of 2 lime wedges over fish.

• Top with more salsa.

• Garnish with extra lime wedges.

Asparagus

• Place asparagus on a sheet pan, drizzle with olive oil (just enough to coat) and sprinkle with salt and pepper.

• Roast at 425°F until just tender when pierced with a fork (about 8 -10 minutes).

Cornbread Rounds

• Unwrap and serve. (Warm in the microwave, toaster or oven if you prefer.)

Tip

Newport Avenue Market’s House-made Italian Meatballs & Spaghetti in Marinara Sauce with Caesar Salad & Ciabatta Rolls

Prep time: 5-10 minutes | Cook time: 20-30 minutes | Servings: 2

Ingredients (to have on hand)

Salt, Pepper, Butter, and Olive Oil

Here’s your shopping list:

6 Newport Avenue Market House-made Italian Meatballs
1 lb. Spaghetti
8 oz. Marinara Sauce
1 Head or Bag of Romaine Lettuce
1 Bottle of Caesar Salad Dressing
2 Ciabatta Rolls

Here’s what to do:

• In a pan over medium heat, drizzle olive oil (we suggest using extra virgin, cold pressed).

• Place meatballs in the pan, turning occasionally, 15 to 20 minutes (or until a meat thermometer inserted into meatballs shows an internal temperature
of 160°F).

• Remove meatballs from pan.

• Drain excess fat from pan.

• Pour marinara into same pan and warm it over medium heat for
2 to 3 minutes.

• Cook the pasta according to package instructions, add it to the
sauce and toss.

• In a separate bowl, toss the trimmed salad greens with Caesar dressing.

• Warm or toast the ciabatta rolls, and butter if desired.

Tip

Newport’s Own (Locally Famous) Lamb Skewers with Couscous, Roasted Beets, & Tzatziki Sauce

Prep time: 5 minutes | Cook time: 20-25 minutes | Servings: 2

Beer: Klamath Basin Bare Knuckle Brown
Dessert: Bontà Gelato (Any flavor will do!)

Ingredients (to have on hand)

Salt, Pepper, and Olive Oil

Here’s your shopping list:

House-made Lamb Skewers (one or two per person, depending)
8 oz. Couscous
8 oz. Roasted Beets
4 oz. Tzatziki Sauce
Mint Sprigs
Naan Bread

Prep Instructions:

• Heat oven to 425°F, or bring grill to medium heat.

• If using the oven, spread 1 or 2 tbsp. of olive oil on a cookie sheet or other ovenproof pan and place lamb skewers on pan.

• On a cutting board, chop mint. (Option: little helpers and those unsure of their knife skills can simply tear mint into small pieces. Bonus: your hands will smell minty-fresh!)

• Slice beets and place on a sheet pan, drizzle with olive oil (just enough to coat), and sprinkle with salt and pepper.

Cooking Instructions

• Bake lamb skewers in oven or grill them for 8 to 10 minutes on one side, turn them over, and cook for 7 to 10 minutes, or until, using a meat thermometer, the internal temperature of the meat has reached 145°F.

• Roast prepped beets at 425°F in oven about 5 minutes.

• Cook couscous according to package instructions.
