Zoe’s Meats established the Salami Store as its retail sister company. For the past 14 years, Zoe’s Meats has been supplying its creations to hundreds of chefs across the country. Now, they are offering these products directly to chefs and consumers from their warehouses.

At The Salami Store, their salamis showcase innovative flavors without the inclusion of sodium nitrite or other undesirable preservatives. Instead, they utilize sea salt and celery powder for curing.

They experiment with various peppers, chilis, wines, and spices to create exciting new products that will surely be the highlight of any gathering or the ideal accompaniment to a cheese board. Recent additions to their lineup include salamis infused with cocoa powder and another cured with tequila. Uncured Ghost Pepper Salami

Beloved by chili lovers, the Bhut Jolokia, commonly known as Naga Jolokia, delivers an intense heat that secured its place in the 2007 Guinness Book of World Records as the world’s hottest chili pepper. Westerners refer to it as the “ghost pepper,” which ranks 500 times hotter on the Scoville Scale than the jalapeño. Along with the ghost pepper, some other key ingredients, like tequila and cilantro, are included. Like all of Zoe’s salamis, the ghost pepper salami is dry-cured and free of nitrites, offering layers of raw heat that allow you to fully enjoy the chili’s subtle sweetness alongside the mild saltiness of the pork.

Saucisson Sec is the French version of dry-cured salami. Known for its saltier flavoring, the name Saucisson comes from the Latin word salsa, meaning salted. Zoe’s Saucisson Sec is nitrite-free and perfectly balances pork, salt, and spices. Key ingredients are pork, wine, cane sugar, garlic, and salt, giving it the bold flavoring you expect from all Zoe’s salamis.  

Pair your Zoe’s Saucisson Sec with your favorite Beaujolais or Cotes du Rhone and a French baguette for the perfect afternoon picnic.
