1/2 cup water
1/4 tsp salt
3/4 cup sugar
18 oz bittersweet chocolate
1 cup unsalted butter
Preheat oven to 300oF and grease a 10” round cake pan. In a small saucepan over medium heat, combine water, salt and sugar. Stir until hot and dissolved; set aside. Melt bittersweet chocolate in a microwave and pour into an electric mixer. Cut butter into pieces and beat into chocolate one piece at a time. Beat in hot sugar water and slowly beat eggs into the mixture, one at a time. Pour batter into prepared pan. Have a baking pan larger than the cake pan ready. Put the cake pan into the larger pan and fill the pan with boiling water halfway up the sides of the cake pan.
Bake in the water bath at 300oF for 45 minutes. Center will look wet.
Chill cake overnight in pan. To unmold, dip the bottom of the cake pan in hot water for 10 seconds and invert onto a serving plate. Slice and serve. Make 12 servings.
