Easter would not be complete without deviled eggs and lucky for you we’ve singled out the best recipes!
Our team challenged each other to an egg throwdown and we determined the best deviled eggs from our in-store competition. The winner was selected by Donna Britt, from Central Oregon Daily’s “Taste This,” look for it on-air!
Winning recipe from our in-store employee deviled egg contest:
Randy Yochum took top prize at this year’s throwdown! Donna Britt selected this recipe for the creative twist and yummy flavor combinations for the Easter Sunday brunch or dinner favorite.
Crystal Gayle’s “Buffalo, don’t it make my brown eye’s Blue” Deviled Eggs
1 tsp mayonnaise
1 tsp Fred Hot Sauce
½ tsp finely diced celery
½ tsp finely diced carrots
½ tsp finely diced white onion
2 tsp blue cheese crumbles, additional for sprinkling on top of each egg
Jeff, in our cheese department, recommends Salemville Blue Cheese Crumbles
Place eggs in a single layer in a saucepan and cover with enough water so there’s 1-inch of water above the eggs. Heat on high until water begins to boil, and then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 14 minutes, then rinse under cold water continuously for 1 minute.
Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Mash the yolks into a fine crumble using a fork. Add mayonnaise, hot sauce, celery, carrots, onion, blue cheese, and mix well.
Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with extra blue cheese crumbles.
Makes 12 halves.
Coming in at a strong second from our in-store employee deviled egg contest:
Dill-icously Deviled Eggs
Second place was a more traditional recipe, which included dill, made by Taedra who works in our floral department.
makes 12 eggs or 24 halves
yolks of 12 hardboiled eggs
1/4 cup dill pickle juice
6 baby dill pickles chopped fine
1-1/2 tsp mayo
1/2 tsp black pepper
1/2 tsp salt
1 tsp fresh finely chopped dill
Place 12 eggs in a single layer in a saucepan and cover with 1-inch of cold water. Heat on high until water begins to boil, and then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 15 minutes, and then rinse under cold water continuously for 1 minute.
Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Mash the yolks into a fine crumble using a fork. Add dill juice, pickles, mayo, salt, pepper, and dill, and mix well.
Evenly disperse yolk mixture into the egg whites with a spoon or piping bag. Dress with extra dill sprinkled on the top of each egg.
